In Australia, the rum rests for eight months in a rare sixty-year-old Tawny cask from the historic Seppeltsfield Winery. This step infuses the spirit with rich notes of stewed fruit and biscuit spice. To ensure perfect balance and tame the wood tannins, it finishes its journey with twenty-two months in a high-char bourbon barrel. This triple maturation results in a pure rum aged for over ten years. Bottled at 52 percent alcohol, it delivers a big texture. The nose opens with aromas of dark berries, sultanas, and vanilla wrapped in wispy oak. On the palate, you will find layers of caramel and mixed peel, followed by a savory pastry note.
