It is a blend of pot and column distilled spirits, crafted to show the true character of the island. The liquid first spends eight years maturing in the tropical Caribbean heat in former bourbon barrels. This initial aging creates a rich and sturdy base.

The rum then travels across the world to Adelaide, Australia. Here, it undergoes a secondary "dry aging" process in a completely different climate. It rests for six months in a rare Spanish Pedro Ximenez sherry cask sourced from Pedro Rodriguez. This step adds deep, dark fruit flavors. Finally, the spirit spends one last year in a high-char bourbon barrel. This triple maturation polishes the texture and tames the tannins.

Bottled at 52 percent alcohol, this is a pure rum with no additives. The nose is full of warm butterscotch, caramel, and toffee. On the palate, you will taste layers of cooked apple, sweet plums, raisins, and figs. A hint of walnut adds a savory touch.
