Wesake - Junmai Ginjo Sake 720ml
Sakura, poured for the table.
A textbook Hyogo dry style
Brewed in Kobe, Hyogo - Japan's historic Nada-Gogo brewing heartland the WESAKE Sakura bottle is an entirely distinct cuvee from the brand's canned Niigata offering, shifting both varietal focus and regional terroir. The recipe centers on premium Yamada Nishiki rice polished to 60%, drawing on Nada's mineral-rich miyamizu groundwater to drive a robust, clean fermentation. Unlike fruit-forward ginjo bottlings that retain heavy residual sweetness, Sakura ferments out to a bone-dry +5 Sake Meter Value (SMV) and 1.5 acidity at 14.5% ABV, executing a textbook Hyogo style marked by structural discipline and restrained elegance.
Delicate floral honeysuckle, ripe white peach, and crisp Asian pear lead the aromatics with pinpoint precision. On the palate, medium physical weight shows greater mid-palate density and mineral cut than its Gohyakumangoku counterpart, balancing subtle rice starch umami against a firm, refreshing acid spine before tapering into a laser-clean, chalky dry finish. In-house testing at USQ showed that serving it lightly chilled at 48°F-52°F in a white wine glass allows the orchard fruit aromatics to bloom while preserving its crisp +5 dryness. Our team recommends pouring it alongside yellowtail sashimi with ponzu, steamed black sea bass with ginger and scallions, or pan-seared pork dumplings. For an elegant aperitif, build 2.5 oz Sakura Junmai Ginjo and 0.5 oz blanc vermouth over a large clear rock in a rocks glass, stirred gently with an expressed lemon peel.
