Originating from the historic Beenleigh Artisan Distillery in Queensland, this molasses-based rum underwent an extraordinary two-stage fermentation process lasting fifteen days. By utilizing two distinct yeast strains, the distillery developed a remarkably high ester profile of 110 g/hL AA, providing an aromatic depth rarely seen in Australian spirits. After an initial eleven-year maturation in the intense tropical heat of Australia, the spirit traveled to the Cognac region of France for a secondary rest in toasted Ferrand French oak casks, followed by a sophisticated four-month finish in rare Palo Cortado Sherry barrels.
The result is a rum of exceptional balance, presenting a golden amber hue and an olfactory profile that opens with bright mandarin jam, grapefruit zest, and dried apricot. On the palate, the experience is assertive yet refined, delivering layers of candied citrus peel, marzipan, and ripe pear. The high-ester "funk" is elegantly harnessed by the oxidative influence of the Palo Cortado cask, which introduces savory undertones of roasted pistachio and dark chocolate.
