IWA 5 Assemblage 3 from 2021 redefines the boundaries of traditional Japanese sake, and this impressive 1.8 liter format stands as the ultimate prize for serious collectors. Created by Richard Geoffroy, the former cellar master of a legendary Champagne house, this release uses the art of blending to craft a remarkably complex drink. Unlike most sake meant for early consumption, this unique brew is designed to age beautifully. The larger bottle size allows the liquid to mature much slower and more gracefully, making it a stunning centerpiece for special gatherings and grand occasions.
To achieve its signature balance, the production process weaves together three premium rice varieties. Yamada Nishiki provides sleek finesse, Omachi adds rich texture, and Gohyakumangoku seals the blend. The brewing team combines these with five distinct yeast strains, a traditional fermentation starter, and special reserve sakes. Every batch of rice is polished down to thirty five percent to ensure ultimate purity and flavor concentration.
In the glass, Assemblage 3 is incredibly pure and intense. The nose opens with bright, vegetal aromas of fresh cucumber and laurel, quickly followed by floral violet and crisp green mango. With a moment of air, darker layers emerge alongside a clear note of white pepper, which is the signature scent of the brand. On the palate, this sake strikes a perfect balance between rich presence and elegant weightlessness. The liquid flows with impressive energy, bringing all the warm wood spices and bright flavors together into a racy, mouthwatering finish.
This premium Junmai Daiginjo sake offers unparalleled flexibility at the dinner table. It easily adjusts to match delicate raw dishes or robust roasted meats. This generous 1.8 liter bottle ensures you have plenty to share throughout a long, varied meal.
