Distilled by Rommel Krassel in Santa María Tlalixtac, Oaxaca, this single cask release showcases the density possible when 100% fresh Java cane juice is fermented in pine vats with ambient yeast, run through a copper pot still, and laid down in virgin French oak. While industrial rums rely on column distillation, diluted molasses, and heavy chill filtration, this unadulterated parcel concentrated over 36 months in a dry cellar, losing 13% to evaporation and yielding just 286 bottles at an uncut 66.5% ABV.
Raspberry coulis, molasses, damp oak, and wheat bran lead the nose, transitioning into an oily, full-bodied palate framed by firm wood tannins. The mid-palate delivers graham cracker, vanilla bean, dried tobacco, and spiced berry creme brulee, finishing dry with a clean, high-proof mineral snap. In-house evaluations at Union Square Wines confirmed that despite the barrel proof, the alcohol remains tightly integrated within the natural cane oils. For spirit-forward cocktail applications, our team recommends splitting it into a Manhattan variation: stir 1.5 oz Alambique Serrano Cask #144 with 0.75 oz sweet vermouth, 0.25 oz amaro, and 2 dashes of aromatic bitters over cracked ice, straining up with an orange twist.
