Single-varietal Pinot Noir harvested manually from the clay-limestone soils of the "La Chapelle" lieu-dit at the base of the Jura hillsides forms the structural core of Vincent Richard "Finambulle." Vinified using indigenous yeasts without malolactic fermentation, the base wine undergoes an eight-month primary maturation before undergoing secondary fermentation in the bottle via the traditional method. The wine rests sur lattes for 12 to 18 months, developing physical autolytic weight and persistent effervescence. Unlike blanc de noirs Crémants crafted with blocked acidity or thermal flash-pasteurization, this organic 12% ABV bottling leverages the cool climate of the Jura to maintain raw structural drive and chalky minerality.
Primary aromas present tart red currant, wild strawberry, citrus zest, and crushed limestone. The palate is defined by a crisp, high-acidity entry that cuts through a medium-bodied mousse, unfolding with notes of sour cherry, green apple, and fresh yeast dough before settling into a long, bone-dry finish with a light saline lift. In-house testing at USQ showed that its bright malic structure makes it a stellar aperitif and food sparkler; our team recommends serving it well-chilled at 42°F paired with Comte cheese gougères, fried soft-shell crab, or savory pork charcuterie.
