The process begins with 100% Pinot Noir, which is hand-harvested, cold-soaked, and pressed whole. Fermentation starts in a stainless steel tank, but the wine is bottled before it is finished, yeast included.

This single fermentation finishes in the bottle, trapping the carbon dioxide. This creates the wine's signature soft, gentle mousse-a bubble that is broader and softer than a full sparkling wine.
