Originating from the lower slopes of Chamery in the Petite Montagne de Reims, Perseval-Farge "Terre de Sables" derives its character from deep sandy-clay soils. Winemaker Benoist Perseval constructs this Premier Cru cuvée from a traditional blend of Pinot Noir, Chardonnay, and Pinot Meunier, incorporating 50% reserve wine from a multi-vat solera system. Aged on the lees for four years prior to disgorgement with an Extra-Brut dosage of 4 g/L, the wine demonstrates how sandy soils soften structural acidity while accentuating salinity and fine textural polish relative to typical chalk-driven expressions from the village.
Aromatics open with yellow orchard fruit, lemon oil, toasted almond, and a distinct sea-spray minerality. The palate carries a medium weight with a fine, creamy mousse, delivering fresh Mirabelle plum, preserved citrus, and crushed shell notes before settling into a long, saline-driven finish. In-house testing at USQ showed that its broad texture and low dosage excel with seafood-centric pairings; our team recommends serving this bottle lightly chilled alongside seared sea scallops, oysters Rockefeller, or roasted turbot with beurre blanc.
