Sourced exclusively from biodynamically farmed parcel selections across the southern slopes of Vertus, this Premier Cru Blanc de Blancs captures the broader, more generous horizontal breadth of southern Côte des Blancs terroir. Unlike conventional négociant bottlings reliant on high sulfur additions, commercial yeast strains, and heavy sugar dosages to mask early harvest greens, Pierre and Sophie Larmandier harvest ripe fruit, ferment spontaneously in large neutral Stockinger foudres, and incorporate 40% of reserve wine drawn from a perpetual solera established in 2004. Bottled without fining or filtration and finished with a minimal Extra Brut dosage of just 2 g/L, the wine prioritizes chalk-driven minerality and pure varietal tension over cosmetic cellar polish.
Structural acidity drives through an unexpectedly broad and supple mid-palate, layering poached yellow pear, lemon curd, and salted butter against crushed Campanian chalk. In-house testing at USQ showed that the prolonged wood maturation and reserve wine volume provide textural density that holds up effortlessly to rich culinary applications. Our team recommends serving this cuvée at 50°F to 54°F in standard white wine stems rather than narrow flutes, allowing the oxidative pastry nuances and saline snap to blossom alongside Montauk sea scallops seared in clarified butter or crusty gougères.
