Distilled in 2004 at South Pacific Distilleries in Lautoka, Fiji, this single-mark, 100% pot still parcel represents one of the oldest Fijian rums ever brought to the United States. Produced exclusively from local Fijian molasses, the distillate underwent a complex three-stage maturation: 12 years in the intense heat of the South Pacific, five years of continental aging in the United Kingdom in American oak, and a final four-and-a-half years resting in New York State. Unlike industrial column-still rums that rely on caramel coloring, chill filtration, or post-dump sugar additions, Holmes Cay bottled this final 21-year cask completely uncut and unadulterated at 58% ABV, yielding an allocation of just 188 bottles.
Fresh green sugarcane grass and unripe banana esters lift on the nose before yielding to cracked black peppercorn, vibrant citrus zest, and rich buttery caramel across the palate. The mouthfeel lands with heavy, oily viscosity, carrying the 116-proof alcohol seamlessly across the tongue before drying into structured oak tannins, aromatic sandalwood, and lingering wood spice.
