Macerating top-grade Kishu Nanko-Ume plums from Wakayama Prefecture directly in a base of Dassai 23 Junmai Daiginjo creates a refined, high-acid plum liqueur. Developed in collaboration with the Umeshu Research Group of Japan, Asahi Shuzo uses only ripe plums and pure sugar, completely eschewing added spirits, artificial colorants, flavorings, or sulphites. Unlike commercial umeshu expressions relying on neutral grain spirits, column-distilled shochu, or heavy sugar syrups, the 23% polished Yamada Nishiki rice base lends a naturally silky palate weight and subtle grain complexity that cuts cleanly through the fruit's tartness.

Aromatics open with fresh green plum, marzipan, white peach, and soft floral rice. On the palate, a lush, medium body delivers a rapid progression of crisp plum skin acidity, juicy nectarine, and candied almond before resolving into a long, dry, mouthwatering finish with a hint of green tea tannin. In-house testing at USQ showed that serving it lightly chilled preserves its delicate rice-and-fruit balance; our team recommends pouring 2 oz over a single hand-carved ice sphere, or building a Dassai Umeshu Spritz by combining 1.5 oz Dassai 23 Umeshu with 3 oz chilled dry Champagne or Prosecco in a white wine glass.
