IWA 5 Assemblage Sake

Born in Shiraiwa, Toyama Prefecture, Japan, IWA is a pioneering sake brand founded by Richard Geoffroy, former Chef de Cave of Dom Pérignon. Rooted in curiosity, experimentation, and innovation, IWA redefines sake through the art of blending, aging, and craftsmanship.

At the heart of IWA is founder Richard Geoffroy, who spent 28 years as the renowned Chef de Cave at Dom Pérignon. He now applies his skillful assemblage techniques and expertise in crafting Champagne to the world of sake. Geoffroy spends weeks at the kura tasting and mixing various brews made using different rice strains, yeasts, and reserves to create each year's unique, perfectly balanced Assemblage.

The Philosophy of IWA

Assemblage

The making of IWA 5 is synonymous with the striving for perfect balance. Assemblage is the answer. It is the art form of blending and IWA’s signature, adding a new paradigm to the existing paradigm of rice polishing.

Singularity

IWA 5’s most salient characteristics are balance and complexity – it is rich yet weightless. It is all about coherence and harmony, a seamless flow of sensations.

Experimentation

The making of IWA will always continue in the spirit of experiment, of pushing the
envelope. This is IWA’s contribution to the New Craft of Sake. Each new Assemblage will be perceptibly different, yet unmistakably IWA.

Maturation

IWA 5 keeps improving over time. This opens up exciting new prospects. IWA 5 has the capacity to be cellared for years at low temperatures with the highest expectations of what the future holds in store.

“IWA speaks the language of wine drinkers. It’s against all odds—the familiar statement is that sakes don’t age, but IWA does.” — Richard Geoffroy
