Grown in the windswept, volcanic ash and pumice soils of Santorini, this 2022 Estate Assyrtiko illustrates how deliberate lees contact softens the variety's fierce natural acidity without stripping its signature basalt core. Artemis Karamolegos employs a partial pre-fermentation cold soak before fermenting exclusively free-run juice in temperature-controlled stainless steel, using a mix of wild and neutral yeasts to protect raw varietal expression. Rather than bottling early for simple primary fruit, the wine rests on its total lees for at least nine months with regular bâtonnage, developing tactile mid-palate density that offsets its high-acid chassis.

Flint smoke, crushed basalt, sea spray, white peach, and dried chamomile dominate the nose. The entry lands with full physical weight and a creamy, fine-grained texture, cut immediately by Assyrtiko's bone-dry, laser-sharp acidity and a wash of Meyer lemon peel. Crushed stone minerality and an enduring, briny salinity define the long, structured finish. In-house evaluations at USQ confirmed that the extended lees aging gives this vintage the structural endurance to handle rich, textured seafood. Our team recommends pouring it alongside whole grilled branzino with lemon and oregano, charcoal-seared octopus, or pan-roasted halibut over white bean puree.
