Montelobos Espadin Mezcal serves as a perfect example of artisanal craft from Oaxaca. Created by agave specialist Dr. Ivan Saldana and fifth-generation mezcalero Don Abel Lopez Mateos, this spirit honors the land and its traditions. It is produced in Santiago Matatlan, an area famous for agave spirits. The goal was to create a mosaic of flavor that balances the four key elements of mezcal: green agave, cooked agave, smoke, and wild fermentation.

The production follows a ritualistic approach. Organically cultivated Espadin agave is roasted in an underground stone pit fueled by pine and encino wood. Once cooked, the agave is milled using a traditional stone tahona wheel pulled by a mule. The juice ferments in open pine vats using only wild airborne yeast. Finally, it is distilled in copper stills over direct fire. This careful process captures the true soul of the plant.

In the glass, the liquid is crystalline with pearl sparkles. The nose offers complex scents of damp earth, fresh cut grass, and honey. You will also find notes of citrus and asparagus. On the palate, there is a perfect balance between the sweetness of cooked agave and the green notes of herbs. Hints of nuts and smoke linger in the finish. It is a bold spirit that tells the story of the wolf and the night.
