Employing a dual-process method of both distilling and infusing roasted cacao nibs inside copper Charentais alembic stills, this historic Dauphiné distillery captures the complex aromatics of nearby Lyon's chocolate heritage. Unlike conventional crème de cacao bottlings that rely heavily on cloying sugar syrups and synthetic vanillin extracts, Meunier isolates the dry volatile oils of the bean through alembic distillation while extracting roasted bitterness and structure through direct infusion. The resulting spirit emphasizes the savory, acidic, and stone-fruit nuances intrinsic to high-grade roasted nibs rather than sugary confectionery gloss.

Palate weight registers as velvety and concentrated yet surprisingly dry, letting bitter chocolate, dark cherry skin, and warm baking spices lead the mid-palate. In-house testing at USQ showed that this lower-sugar profile acts as a structural modifier that integrates seamlessly into spirit-forward cocktails without unbalancing total sweetness. For a refined take on the Left Hand, our team recommends stirring 1.5 oz bourbon, 0.75 oz sweet vermouth, 0.75 oz Campari, and 0.5 oz Meunier Cacao Noir over ice, straining into a coupe with an expressed orange peel. It also proves essential in a classic 20th Century: shake 1.5 oz London Dry gin, 0.75 oz Lillet Blanc, 0.75 oz fresh lemon juice, and 0.75 oz Meunier Cacao Noir with ice, then fine-strain up.
