What makes this bottle unique is the science behind it. In 1987, the brewery worked with a local doctor to create a specific yeast for the region. The result was Cel-24, a yeast that produces incredible fruit aromas. Boken Ringo is one of the original sakes to use this yeast. The name "Ringo" translates to "apple," which perfectly describes the flavor profile.
This sake bursts with the scent of fresh green apples and juicy pears. It also has soft notes of white flowers. On the palate, it offers a balance similar to a crisp California Chardonnay.
