Boken Nigori Junmai Ginjo Sake stands alone as a truly unique creation in the world of rice wine. Produced by Hiraizumi Honpo, Japan's second-oldest brewery established in 1487, this bottle represents over five centuries of history. While the brewery in Akita Prefecture honors tradition, 27th-generation brewmaster Masaaki Saito uses these ancient skills to innovate. This is the only slightly cloudy sake in the world crafted with the labor-intensive Yamahai method and the high-acid No. 77 yeast.
The production takes place during the snowy winters of northern Japan. The cold air allows for a slow fermentation that builds deep flavor. Unlike heavy unfiltered sakes, this "usu-Nigori" is semi-filtered and elegant. It pours with a delicate, misty appearance. The aroma is inviting, offering notes of ripe banana and fresh melon.
On the palate, the texture is velvety and lush. Rich flavors of steamed rice mix with a touch of sweetness. However, the special yeast adds a vibrant acidity that cuts through the creaminess.
