Brewed specifically around Scandinavian winter solstice traditions, this fortified cyser incorporates whole cinnamon bark and pressed apple juice directly into a slow-fermenting honey must prior to spirit fortification. Fermented in Billund according to historical Nordic methods, the liquid achieves an oxidative, robust profile anchored at 19% ABV. Rather than utilizing chemical cinnamon flavorings or liquid caramel colorants that characterize mass-market holiday cordials, Dansk Mjod relies on the natural astringency and volatile oils extracted from whole spices to counterbalance the dense residual honey sugars, producing a warming structure built similarly to a spiced tawny port.
Palate weight enters unctuous and richly textured, introducing layers of baked orchard fruit, beeswax, and sweet honey before cassia bark dryness and spirit heat tighten the back-palate. In-house testing at USQ showed that the apple's intrinsic malic acid provides just enough structural lift to keep the spiced finish clean and digestif-like rather than syrup-bound.
