Unlike dessert-style honey wines that rely exclusively on residual sweetness to create mouthfeel, Klapojster Mjod introduces the savory herbal bite and phenolic dryness of traditional Scandinavian schnapps. Whole hops boiled into the original must contribute subtle resins and background bitterness, forming a savory framework that cuts directly through the honey's natural unctuousness.
Palate weight registers as viscous and palate-coating on entry, but quickly pivots as savory caraway oils, dried citrus peel, and gentle rye-grain spirit heat tighten across the mid-palate.
