Distilled strictly from 100% estate-grown Pays d'Auge cider apples, this 3-year-old expression highlights the traditional woodfire double distillation that defines the historic Roger Groult domaine. Unlike modern industrial Calvados produced via continuous column stills in the broader appellation, this AOC Calvados Pays d'Auge bottling matures for a minimum of three years in seasoned French oak casks managed through a perpetual solera-style blending system. The nose opens with crisp, high-toned tart green apple, underripe pear skin, and subtle sweet cream, followed by delicate undertones of vanilla bean and toasted hazelnut.
Physical texture across the palate is rounded and supple without relying on heavy sugar dosage, balancing fruit weight against a clean, 40% ABV core. Crisp orchard fruit commands the entry before giving way to warm baking spice, soft wood tannins, and a cooling hint of spearmint on a dry, refreshing finish. In-house testing at USQ proved its orchard acidity cuts through citrus-driven sour formats with exceptional precision: our team recommends an authentic Corpse Reviver No. 2 riff by shaking 0.75 oz Roger Groult 3 Yr Calvados, 0.75 oz gin, 0.75 oz Lillet Blanc, and 0.75 oz fresh lemon juice over ice, strained into an absinthe-rinsed coupe.
