Sourced from 30-year-old Pinot Noir vines planted across 1.27 hectares of steep, clay-limestone terres blanches slopes in Maimbray, this direct-press Sancerre Rose reflects the rigorous viticulture of the Reverdy family. Unlike regional expressions relying entirely on short saignee bleeding or blended press fractions, the estate hand-harvests at 7,000 vines per hectare and ferments 90% in stainless steel with 10% in neutral oak demi-muids, maintaining structural focus without sacrificing raw fruit purity.
Acidity drives the palate with remarkable precision, counterbalancing the bottle's native 14.22% ABV with a pH of 3.32 that keeps the weight lifted and crisp. On the nose, sharp red grapefruit and subtle crushed-berry notes lead into a chalky, limestone-bound finish that persists long after the sip. In-house testing at USQ showed its taut acid profile pairs best alongside fresh hamachi nigiri or a classic strawberry tart.
