Steeping hand-gathered English sloe berries in copper-pot London Dry Gin for up to four full months allows this traditional bottling to capture the authentic, bittersweet profile of Victorian-era cordials. Unlike modern mass-market sloe gins that rely on neutral alcohol tinted with fruit concentrates and padded with heavy simple syrups, Hayman's draws both deep color and structure directly from the macerated skins and kernels of wild Prunus spinosa. The botanical backbone-featuring juniper, coriander seed, and citrus peel-remains tactile and distinct beneath the rich fruit, supplying an essential savory counterpoint to the berry's natural pectin and tartness.
Palate weight registers with a silky, medium-density viscosity that avoids cloying sweetness thanks to a firm pulse of natural malic acidity. In-house testing at USQ showed that crushed plum, bright redcurrant, and subtle marzipan give way quickly to dry, resinous juniper and fine-grained fruit-skin tannins. For a crisp Sloe Gin Collins, our team recommends shaking 1.5 oz Hayman's Sloe Gin, 0.75 oz fresh lemon juice, and 0.5 oz simple syrup with ice, straining over fresh cubes in a Collins glass, and topping with 2 oz soda water.
