The farming team carefully hand harvests one hundred percent Montepulciano grapes from certified organic vineyards. Growing at nearly two hundred meters above sea level in the Vasto production area, the vines thrive in rich sand and limestone soils with a warm southeast exposure. Once picked, the grapes are pressed immediately. The juice undergoes its first temperature controlled fermentation in stainless steel tanks for fourteen days. To achieve its signature crisp bubbles, the wine finishes a second fermentation right inside the bottle. It then rests for an additional three months to build delicate complexity before release.
