Distilled, blended, and bottled entirely in the Caribbean, this historic cross-island collaboration pairs unaged Coffey twin-column distillate and 2-year-old copper pot rum from Foursquare in Barbados with unaged, high-ester copper pot rum from Hampden Estate in Jamaica. Produced strictly additive-free and non-chill filtered in line with the proposed Barbados Geographical Indication, it avoids the heavy charcoal stripping and artificial flavor additives common to conventional industrial white rums. The nose breaks immediately with ripe plantain, rich mascarpone, crushed strawberry, and sugarcane grass.
Physical density sets the mid-palate apart from typical bar rails, delivering real oily weight backed by a crisp 47% ABV core. Underripe green mango, coconut oil, and raw marzipan drive through the center before pivoting to cracked black pepper, allspice, and smoky charred pineapple on an extended, dry finish. While dense enough to pour neat over a single cube, in-house testing at USQ confirmed it acts as a transformative base for an authentic Daiquiri: shake 2 oz Probitas with 0.75 oz fresh lime juice and 0.5 oz rich simple syrup (2:1) over cracked ice and strain coupe-side for an exceptionally layered, ester-rich classic.
