The winemaking approach here is rooted in minimal intervention to let the terroir shine. Jordan employs practicing organic farming methods to ensure the health of the vines. In the cellar, the grapes undergo fermentation using native yeasts. A significant portion, about 30 percent, is fermented as whole clusters.
