Planted in 1990 on the site of a former brick kiln in Rueda, the single-vineyard Finca Los Hornos features river stones over unusually acidic, gypsum-rich subsoils at 719 meters elevation. Unlike high-yield industrial Verdejo stainless-steel blends, this low-yield parcel is harvested cold and fermented with indigenous yeasts before resting for eight to nine months on its fine lees in 850-liter neutral wooden vats. This non-traditional vinification tames the grape's aggressive herbal punch, replacing it with a textured, mineral-driven structure that retains pristine varietal acidity.
Bright yellow with soft gold highlights, the wine opens with aromas of grapefruit zest, white peach, wild thyme, and subtle river-rock minerality alongside a faint peat note. The palate carries a medium weight with sharp, linear acidity that cuts cleanly across the mid-palate. Subtle wood framing supports flavors of tart stone fruit, dried grass, and saline minerals before concluding with an extended, anise-accented finish. In-house testing at USQ showed that this bottle handles structured, savory fats effortlessly; our team recommends pairing a chilled bottle alongside pan-roasted halibut with fennel bulb or a board of aged manchego and cured jamón ibérico.
