Suspending calcium-alginate-encapsulated popping pearls directly in a 12.5% ABV spiced cordial base shifts this autumn release away from traditional liquid-only holiday liqueurs into modern textural mixology. Rather than relying on dairy creams that require refrigeration and separate preparation, Boba POPS utilizes a shelf-stable, vegan emulsion that balances sweet pumpkin notes, cassia cinnamon, nutmeg, and clove. The molecular encapsulation ensures the liquid-filled boba spheres maintain their tactile burst and pop on the palate rather than dissolving into the surrounding alcohol solution over time.
Viscous sweetness and creamy pumpkin lead the initial palate, followed immediately by the physical pop of the boba spheres releasing concentrated spiced vanilla syrup. In-house testing at USQ showed that the moderate 12.5% ABV keeps the alcohol heat restrained, allowing the dessert-like baking spices to remain front and center without turning astringent. Our team recommends serving it thoroughly chilled over pebble ice with a wide-gauge boba straw, or utilizing it as a playful topping for spiked iced coffee: pour 2 oz cold brew concentrate and 2 oz oat milk over ice, layering 2 oz Boba POPS Pumpkin Spice directly on top.
