Direct-to-press vinification defines the 2025 release from Seneca Lake, marking a deliberate stylistic shift away from extended skin contact to curb heavy pigment extraction and retain sharp primary fruit aromatics. Sourced across two machine-harvested passes from the Martini Family and Nutt Road vineyard sites, this cool-climate Cabernet Franc undergoes immediate gentle pressing to achieve a pale, salmon hue. The nose delivers precise aromas of tart red currant, crunchy wild strawberry, and crushed rhubarb, backed by an authentic varietal herbal trace of fresh chervil and flinty shale minerality.
Brisk, cool-climate acidity (5.37 g/L, pH 3.46) sets a clean, linear pace across the palate, neatly balancing a subtle 6 g/L residual sugar that fills out the mid-palate without leaving sticky sweetness. Crisp red cranberry, watermelon rind, and white pepper lead the mid-palate, giving way to a savory, saline-tinged dry finish. In-house testing at USQ showed this tensile acid structure cuts straight through oily fish and rich sheep's milk cheeses, while remaining light enough for casual warm-weather sipping. Our team recommends pouring it well-chilled alongside grilled trout with lemon herbs, prosciutto-wrapped melon, or fresh beet and goat cheese salads.
