Once our bottles are gone, they're gone.
Yielding a microscopic run of just 237 bottles, this single-cask release highlights Rommel Krassel's proprietary column still fueled entirely by fresh-pressed mountain Java sugarcane juice. Fermentation takes place in open pine vats utilizing native airborne yeasts, generating an assertive, ester-dense foundation. The spirit first matures for 28 months in an American oak Mexican rum barrel before undergoing a rare, 9-month finishing period in a cask seasoned with jackfruit. Unlike standard molasses distillates filtered or masked with synthetic flavorings and caramel color, this bottling preserves the raw, earthy profile of Oaxaca's cloud forest canopy while absorbing tropical funk and resin from uncommon wood.
Palate weight opens with dense, viscous texture at 54.8% ABV, showing green mango skin, tart cherry, and damp potting soil before drying into pipe tobacco, allspice, and clove. In-house testing at USQ showed that introducing three drops of spring water tempers the spirit's mineral astringency, drawing out sweet vanilla bean, beeswax, and tropical wood oils from the jackfruit cask. For a spirit-forward Oaxacan take on an Old Fashioned, our team recommends stirring 2 oz Zacua Single Cask, 1 barspoon raw agave nectar (2:1), and 2 dashes aromatic bitters over cracked ice, straining onto a large rock with an expressed lemon peel to balance the spirit's deep, savory undertones.
