Bottled at full cask strength at a potent 65.9% ABV, this limited 529-bottle release showcases pure, unrectified copper alembic pot still distillation fueled entirely by high-elevation Java sugarcane harvested at 3,000 feet. Ambient wild yeast fermentation in open native pine tanks imparts a savory, vegetal foundation before the rum enters a nuanced maturation track: one component rested 33 months in new French oak followed by 13 months in ex-red wine Hungarian casks (46 months total), while the secondary parcel aged 35 months in Mexican fortified wine barrels of American oak. Unlike industrial molasses-based rums heavily back-sweetened or artificially colored to mimic age, this mountain aguardiente balances raw, agrarian ester energy against tight European and American wood grain.
Palate weight is dense and expansive, delivering sweet roasted corn, macerated black cherry, and cut cane grass before red wine tannins and dry oak clamp down on the finish. In-house testing at USQ showed that introducing three to four drops of room-temperature water softens the high-octane heat, unlocking salted caramel, dried tobacco leaf, and cracked pimento spice. For an assertive, rum-forward cocktail build, our team recommends a Cane Manhattan: stir 2 oz Tepejilote Blend #3, 0.75 oz sweet vermouth, and 2 dashes aromatic bitters over cracked ice, straining into a chilled Nick & Nora glass with an expressed orange twist to mirror the wine-cask fruit structure.
