Distilled on the specialized Krassel column still in Santa María Tlalixtac, Oaxaca, this single cask expression explores the intersection of 100% estate-grown Java cane juice and extended maturation in American ex-bourbon oak. Distillers Axel and William Krassell fermented the raw cane juice in stainless steel using indigenous ambient yeasts, followed by 42 months of slow aging in a humid cellar that tempered evaporation to an 8% angel's share. Unlike industrial expressions dosed with caramel coloring or back-sweetened after the dump, this pure aguardiente de cana enters the bottle unfiltered at an authentic cask strength of 55.3% ABV, with a strict micro-yield of only 264 bottles.
Citronella, crushed coriander seed, bitter orange peel, and dried lemongrass define the initial aromatics before giving way to warm Ceylon cinnamon. The entry carries a distinctly silky, glycerol-rich weight across the palate, balancing the structural proof against layers of dark maple syrup, whole clove, and sweet resin. Citrus blossom honey and pithy Seville orange sustain a structured, bone-dry finish. In-house testing at USQ showed its herbal-citrus tension excels in a stirred Ti' Punch Old Fashioned: muddle a thin disc of lime peel with a barspoon of raw cane syrup, add 2 oz of Cask #268, stir over a single large cube until chilled, and express lime oils over the surface.
