Fermented up to 72 hours in wooden larch washbacks, this central Highland malt maximizes wash contact to generate heavy apple and pear esters before distillation through tall, bulbous copper pot stills fed by the alluvial Pitilie Burn. Maturation spans a full 12 years in a balance of ex-bourbon, refill, and re-charred American oak casks, supplemented by finishing parcels rested in ex-Oloroso sherry wood. Unlike heavily peated Islay single malts or coastal expressions defined by maritime salinity, Aberfeldy prioritizes a classic Perthshire profile anchored in malty sweetness, rounded oak, and only a subtle thread of highland peat.
Palate weight is medium-bodied with an oily texture, coating the tongue with clover honey, spiced poached pear, and vanilla bean fudge before Seville orange zest and toasted grain provide structure. In-house testing at USQ showed that the spirit holds its malt integrity exceptionally well when integrated into stirred cocktails. For an authentic Rob Roy, our team recommends stirring 2 oz Aberfeldy 12, 0.75 oz Cocchi Storico sweet vermouth, and 2 dashes Angostura bitters over cracked ice, straining into a chilled coupe with a brandied cherry. It also proves remarkably food-friendly alongside sharp English cheddars or seared duck breast, where the honeyed malt contrasts savory richness.
