After a long 28-day period of skin contact, the wine undergoes a meticulous aging process: a minimum of 30 months in large, 25-to-50 hectoliter Slavonian oak casks, followed by an additional nine months in the bottle. This extended maturation tames the powerful structure, allowing the Ovello character to emerge.
