About Dansk Mjod Vikingernes Mead
Infusing a traditional fermented honey base with aromatic hops and botanical spices prior to fortification with neutral grain spirit lends this Danish mead an oxidative weight closely aligned with aged white port. Rather than relying on cloying fruit syrups or artificial thickeners, the Billund-based producer utilizes the lupulin resins and essential oils of whole hops to counterbalance dense residual sugars. This botanical addition acts as a structural spine, checking the unctuous honey character with fine herbal bitterness, subtle drying resins, and floral acidity.

Palate weight enters viscous and palate-coating, introducing candied citrus peel, orange blossom honey, and yellow plum before hop aromatics and peppery baking spices tighten the finish. In-house testing at USQ showed that the high 19% ABV fortification prevents the beverage from feeling heavy or cloying, ensuring the honey notes finish clean and dry. Our team recommends serving it chilled at 45°F to 50°F in a tulip glass alongside sharp farmhouse cheeses, salted roasted almonds, or spiced pear crisps. In cocktail applications, it operates seamlessly like a fortified white aperitif: build 2 oz Vikingernes Mjod over cracked ice in a rocks glass, top with 2 oz dry tonic water, and express a lemon peel to accentuate the herbal hop structure.
