About Dansk Mjod Odin's Skull Mead
Blending fresh tart apple juice directly into a traditional fermented honey base alongside whole hops and cinnamon transforms this Danish bottling into a fortified cyser with remarkable structural drive. Produced in Billund, the spirit utilizes the malic acidity of green orchard fruit to cut through the viscous density typical of pure honey fermentations. Unlike conventional fruit-flavored dessert wines that rely on post-fermentation synthetic flavorings or heavy glucose additions, Dansk Mjod integrates real pressed juice and raw cinnamon bark, anchoring the blend with a 19% ABV neutral spirit fortification that locks in natural fruit freshness while contributing an oxidative, cellar-stable backbone.

Structural acidity hits the mid-palate immediately, carrying notes of crisp Granny Smith skin and baked honeycomb before grounding into dry hop bitterness and woodsy baking spice. In-house testing at USQ showed that the apple's natural bite acts as an internal stabilizer, ensuring the residual honey sugars never overwhelm the palate. For an elevated seasonal highball, our team recommends pouring 2 oz Odin's Skull over cracked ice in a rocks glass, adding 2 oz dry ginger beer or club soda, and garnishing with a thinly sliced honeycrisp apple wheel and a cinnamon stick. Served lightly chilled at 50°F to 54°F, it also pairs seamlessly with crisp pork belly or sharp farmhouse cheeses.
