Produced by second generation master distiller Pedro Bautista, this remarkable spirit captures the rugged beauty of Oaxaca. The process begins in the arid village of Zoquiapam Boca de Los Rios. Local farmers carefully cultivate a hearty, yellow cane variety that grows beautifully among columnar cacti. They irrigate the fields using fresh water drawn directly from the nearby river. The team allows the plants to mature for two full years before harvesting to ensure maximum flavor development. Once cut, the stalks are promptly crushed in a small electric mill. The fresh juice then ferments in large closed tanks for over twenty days. This incredibly slow fermentation builds deep, complex aromatic layers. Finally, Bautista processes the liquid through a handmade, wood fired continuous copper still, a technique he has perfected over two decades.
