The production process relies on deep family tradition and attention to detail. After harvesting the rare cane, the fresh sugarcane juice ferments into a rich liquid base. Lopez then distills the batch using a custom five plate copper and stainless steel still. His father built this unique piece of equipment entirely by hand. The still is heated directly by an open flame, a traditional technique that adds remarkable depth and rustic character to the final spirit.
