El Amparo Rum offers a rare look into the rich distilling history of Ecuador. For over sixty years, the Zorrilla family has crafted this pure single rum in the city of Jipijapa. It remained a closely held local secret until now. This exciting release celebrates three generations of dedication and brings a vibrant South American spirit to the global stage.

The production process honors traditional farming and entirely natural methods. The family grows and harvests a unique sugar cane variety known as Cubana Negra. They press the fresh cane juice and allow it to ferment naturally with wild yeast in large vats for up to seven days. Next, the liquid goes through a single pass in a small copper batch still. It is bottled straight from the still at a robust 57.5 percent alcohol. This hands-on technique preserves the heavy, authentic character of the raw cane.

Most modern rums rely on molasses and industrial column stills. El Amparo stands apart by showcasing vibrant, earthy cane juice. The nose is bright and vegetal. It bursts with welcoming scents of ripe banana, fresh grass, and lemon zest. After a moment, deeper notes of sea air and baked corn bread appear. The palate is incredibly rich and structured. Warm tropical flavors of fresh pineapple mix beautifully with savory olive brine and spruce tips. The finish lasts for ages, leaving a warming trail of cedarwood, gentle spice, and a touch of honey.
