Yielding an ultra-limited allocation of just 290 bottles, this four-year-old single cask highlights Rommel Krassel's proprietary column still fueled entirely by fresh-pressed mountain Java sugarcane juice. Ambient wild fermentation in open pine vats develops a savory, vegetal backbone before the spirit rests 35 months in virgin French oak, followed by a secondary 13-month finish in a Hungarian oak ex-red wine barrel. Unlike molasses-based industrial rums sweetened with heavy post-distillation syrups or colored with artificial caramel, this high-elevation aguardiente de cana retains the raw agrarian energy of Santa María Tlalixtac, sculpted by the structural tannins and dark fruit character of European wine timber.
Palate weight is medium-to-full with a silky, structured texture at its natural cask strength of 46.9% ABV, showing candied cranberry, dried hibiscus, and pressed sugarcane before savory French oak and drying red wine tannins clamp down on the mid-palate. In-house testing at USQ showed that the spirit's vinous structure bridges the gap between aged cane spirit and fine spirits matured in wine wood, maintaining crisp acidity throughout the finish. For a spirit-forward Oaxacan Manhattan riff, our team recommends stirring 2 oz Árbol de Pipe, 0.75 oz Cocchi Storico sweet vermouth, and 2 dashes Peychaud's bitters over cracked ice, fine-straining into a chilled coupe with a brandied cherry to accentuate the Hungarian wine cask's berry notes.
