Boken Hayashi Sake captures a bold bridge between history and modern taste. Crafted by the Hayashi Ryuhei Brewery, which has stood in Fukuoka Prefecture since 1837, this sake reflects the pristine environment of the Imagawa River and Hiko Mountain. It is a rare example of the Nama Honjozo style. Because it is unpasteurized, the liquid remains raw and lively in the bottle.
The brewmasters use 100 percent Yume-Tsukushi rice for this release. This is a local table rice grown only in Fukuoka, rather than a standard brewing grain. This unique choice creates a sake with deep umami and a soft, round texture that feels filling on the palate. With a rice polishing ratio of 65 percent and the use of Kyokai No. 7 yeast, the result is authentic and robust.
At 19 percent ABV, this sake offers a powerful presence. In the glass, you will find savory notes of roasted nuts and toasted grain. The finish is remarkably dry and crisp.
