Once our bottles are gone, they're gone.

Distilled entirely from fresh Java sugarcane juice in Oaxaca's cloud forest, this 571-bottle release showcases a deliberate four-cask maturation strategy using both copper alembic pot and continuous Krassel column distillates. Ambient wild-yeast fermentation in open pine vats establishes an agrarian, ester-rich base before the spirits enter aging: one component spends three years in new French oak followed by eleven months in ex-tequila casks, while the second parcel rests 38 months in ex-bourbon wood with a ten-month finish in ex-Merlot barrels. Unlike industrial rums softened with post-distillation sugar or artificial colorants, this cask-strength expression captures unadulterated cane terroir shaped by complex secondary wood grain.

Palate weight is dense and oily at 56.1% ABV, delivering concentrated orange compote, brioche, and red currant before herbal floral notes and crushed peppercorn grip the tongue. In-house testing at USQ showed that three to four drops of room-temperature water unpack the proof, releasing aromatic lavender, warm baking spices, and the earthy cocoa butter quality of native rosita de cacao. For an elevated stirred cocktail, our team recommends a Canada Martinez: stir 1.5 oz Mariposa 88, 1.5 oz sweet vermouth, 1 barspoon maraschino liqueur, and 2 dashes orange bitters over cracked ice, straining into a chilled coupe with a wide orange swath to heighten the tequila and red wine cask accents.
