Formulated in Padua in 1952 by Venetian entrepreneur Angelo Dalle Molle, Cynar Ricetta Originale is built on a proprietary infusion of thirteen herbs and botanicals, anchored by the bitter leaves of the globe artichoke (Cynara scolymus). The natural presence of cynarin-the compound responsible for the artichoke's characteristic flavor-altering profile-gives this amaro its signature bittersweet dynamic without imparting an outright vegetable taste. Bottled at a approachable 16.5% ABV, Cynar relies on a lower-proof spirit base and natural botanical sugars to yield a dark, herbaceous profile that bridges the gap between lighter aperitivi and heavy post-dinner digestivi.

Aromas of dark caramel, roasted chicory, dried bay leaf, and woodsy herbs lead the nose with subtle earthy lift. The physical palate weight is medium-bodied and supple, opening with initial sweetness-dried fig and cola nut-before shifting into a mid-palate dominated by vegetal bitterness, gentian, and dark cocoa. In-house evaluations at USQ emphasize its incredible utility as a modifier in modern cocktail builds-our team recommends swapping out sweet vermouth for a Cynar Manhattan, combining 2 oz rye whiskey, 1 oz Cynar, and 2 dashes of Angostura bitters stirred over ice and strained into a chilled coupe with a brandied cherry, or simply pouring 2 oz over ice topped with 3 oz chilled tonic water and a lemon wheel.
