Formulated in partnership with the Ribe VikingeCenter to celebrate the town's 1,300-year history, this fortified cyser incorporates bog myrtle (Myrica gale)-the preeminent brewing botanical used across the Nordic region before the widespread adoption of hops. While commercial honey beverages frequently mask flat base fermentations with heavy caramel syrup and artificial essences, Dansk Mjod extracts natural astringency, resinous tannins, and tea-like aromatics directly from steeped whole myrtle leaves. Sourced apple juice introduces crisp malic acidity, establishing an assertive structural counterweight against dense, unctuous honey sugars prior to spirit fortification.
Palate weight enters viscous and mouth-coating with notes of wild comb honey and poached orchard fruit before a swift herbal grip tightens the mid-palate. In-house testing at USQ showed that the tannic bitterness of the bog myrtle cuts cleanly through the residual sugars, leaving a dry, camphor-accented finish reminiscent of an aged herb-infused amaro or dry aperitif wine. Our team recommends serving it chilled between 50°F and 54°F in an all-purpose white wine glass alongside cured pork belly, venison pâté, or sharp farmhouse cheeses. For an aromatic low-proof serve, stir 2 oz Ribe Mjod over ice with 2 oz soda water and an expressed lemon peel to highlight the savory woodland botanicals.
