Low-yield copper alembic distillation and spontaneous pine-vat fermentation define the radical ester profile of Alambique Serrano Alambique de Cobre Pot Still White Rum. Produced in Santa María Tlalixtac within Oaxaca's mountainous Cañada region, third-generation distillers Los Hermanos Krassel hand-harvest organic Java varietal sugarcane cultivated on steep hillside plots (laderas) reaching up to 1,200 meters. The fresh-pressed cane juice ferments exclusively with ambient airborne yeasts inside wooden pine vats before undergoing slow, double distillation in small 250-liter copper pot alembics-a setup yielding a scant five liters per hour. Unlike industrial rums rectified through high-volume multi-column stills from molasses, this unaged, additive-free spirit enters the bottle at a potent, full-proof cask strength of 71.1% ABV, completely unfiltered to preserve every congener and volatile lipid.
Dense, viscous, and distinctly oily in mouthfeel, the rum opens with sharp brine, sour green olives, fermented plantains, and pronounced lactic tang. As the high-proof heat settles across the mid-palate, notes of crushed lemongrass, green papaya, lime zest, and cracked peppercorn cut through the spirit's heavy ester core, finishing with chalky minerality, pine sap, and savory vegetative funk. In-house evaluations at USQ show the spirit evolves dramatically with a small measure of water or prolonged air contact. For a rustic, high-ester Ti' Punch, our team recommends adding 2 oz Alambique de Cobre, 1 barspoon raw cane syrup (such as piloncillo), and a freshly cut disc of lime peel gently swizzled with a single ice cube to temper the proof while unlocking explosive tropical aromas.
