Developed specifically by the distillery, "Baby Jane" is a non-GMO heirloom corn cultivated for higher starch content and textural viscosity. Distilled between Widow Jane's Red Hook, Brooklyn pot-and-column facility and partner facilities in Kentucky, the distillate enters charred 53-gallon new American oak barrels before assembling in ultra-small batches in Brooklyn. Proofed to 91 with mineral-laden, calcium-rich water sourced from upstate New York's Rosendale limestone mines and bottled without chill filtration, the spirit retains its dense grain oils and mouth-coating richness.
Honeycomb, cream soda, and salted maritime air open the nose before leading into a palate built on confectionery sweetness and baking spice. Ripe fig, café au lait, and salted caramel transition toward a distinctive strawberries-and-cream mid-palate, framed by allspice and cracked rye pepper. The finish holds sustained warmth without astringency, lingering on peach compote, milk chocolate, and horchata. In-house evaluations at USQ show the spirit's natural grain creaminess shines neat, though our team recommends trying it in a New York Sour: shake 2 oz Baby Jane Bourbon, 0.75 oz fresh lemon juice, and 0.75 oz simple syrup with ice, strain into a rocks glass over a large ice cube, and gently float 0.5 oz dry red wine (such as a fruit-forward Malbec) across the surface.
