Distilled in small batches using traditional copper pot stills in Sidney, British Columbia, Bitter Bianca Aperitif is a clear, botanical white amaro engineered specifically for classic cocktail builds. Crafted by Victoria Distillers, this spirit relies on eleven natural botanicals-including gentian root, wormwood, orange peel, lemon peel, star anise, and allspice-to build a crisp 29% ABV bittersweet profile. Unlike traditional red aperitivi that rely on heavy carmine dyes or dark amari back-sweetened with burnt sugar syrups, this uncolored, clear aperitif delivers bitter herbal complexity without altering the visual presentation or adding heavy, cloying syrup weight to a glass.

Citrus zest, dried chamomile, and subtle licorice aromas open the nose before revealing earthy root spices. On the palate, a medium-bodied weight carries initial waves of bright orange oil and white peach, which quickly transition into a structured, mouthwatering bitterness driven by wormwood and gentian. In-house testing at USQ showed that its clear color and precise sugar-to-acid ratio make it an exceptional modifier for clear spirits; our team recommends stirring a White Negroni using 1.5 oz London Dry Gin, 1 oz Bitter Bianca Aperitif, and 1 oz Lillet Blanc, served over a large ice cube with a grapefruit twist.
