Infusing a two-year-old straight bourbon base with whole-botanical extracts and ethically harvested North American beaver castoreum, Tamworth Distilling revives an early-American flavoring tradition rarely encountered in commercial spirits. Unlike flavored whiskeys padded with synthetic confectionary syrups and artificial vanillin, this small-batch New Hampshire bottling relies on the natural organic chemistry of the castor sac-an FDA-classified GRAS natural flavoring-which yields dense vanillic compounds, cured leather notes, and wild raspberry phenolics. Master distiller Steven Grasse bridges these musky, fruit-forward secretions to the charred oak barrel with wild-foraged northern botanicals, including Canadian snakeroot (wild ginger), aromatic birch oil, and fir needles.
Palate weight is dense and structured, coating the tongue with warm corn sweetness, toasted oak spices, and an oily, viscous texture rarely found in young whiskeys. In-house testing at USQ showed that the castoreum's animalic leather tones integrate cleanly into bitter cocktail modifiers rather than dominating the pour.
