Steeping wild autumn-harvested sloe berries directly into an authentic copper-pot London Dry base spirit establishes this bottling as a benchmark for traditional English fruit cordials. Unlike industrial expressions back-sweetened with heavy corn syrups and fortified with artificial berry extracts, Sipsmith relies on whole blackthorn drupes (Prunus spinosa) resting for months in their flagship gin. This extended contact allows the spirit to leach out both juice and the distinct marzipan character derived from the berry stones, while the underlying juniper, coriander, and angelica provide a firm, savory structural spine.
Palate weight registers as moderately viscous but remains brisk and taut, carried by the natural malic acidity of the fruit. In-house testing at USQ showed that dark cherry, ripe redcurrant, and tart plum lead the entry before stony tannins and peppery juniper dry out the mid-palate, preventing cloying buildup. Our team recommends building a classic Sloe Gin Fizz: shake 1.5 oz Sipsmith Sloe Gin, 0.75 oz fresh lemon juice, and 0.5 oz simple syrup with ice, strain into a highball glass over fresh ice, and top with 2 oz club soda. For an effortless celebratory serve, pour 1 oz sloe gin into a chilled flute and top with 4 oz Brut Champagne, letting the berry acidity slice cleanly through the sparkling wine's richness.
