The fresh cane juice is concentrated into a light syrup over a fire fueled by leftover sugarcane fiber. It then undergoes a wild, spontaneous fermentation in open-air concrete vats for up to ten days before being distilled in direct-fire pot stills. The result is a wild and opulent spirit, bottled with absolutely no additives, coloring, or sugar. This "flight proof" version is bottled at 69% ABV, a slightly lower proof than the 75% ABV version enjoyed by Grenadians on the island.
